This tart and dry beer isa beautiful balance of the earthy tones from the Belgium saison and cherry like aroma from its time on Syrah skins repurposed from Carto wines

We aged a French/Belgium Saison with fresh leaves from a trio of myrtles  - lemon

and finishes with layers of baked dark stone fruit

Our house culture of naturally foraged yeast and bacteria laid to rest with a base saison brewed in October 2020

Gentle Hands Total ageing time 9A mixture of our escarpment foraged yeast and bacteria, and those naturally occurring on the skins of organic nectarines courtesy of Produce from Orange. A sour beer with strong nectarine upfront and a dry finish with hints of citrus and grapefruit. Total ageing time 18 months 9 months in French oak Bottle Conditioned ABV. 6. 4% 268 bottles produced
