Mauro Vergano was a chemist working for pharmaceutical companies developing flavours and used his love of flavour to make apertivo drinks for his family and friends. Mauro starts with red wine made by his niece in law Nadia of Cascina Tavijn. He then adds sugar, alcohol and a combination of citrus, quinine, wormwood, orange peel, gentiana root and various dry herbs. Serving suggestion
